I’m not one to brag. But when I knock it out of the ball park and my whole family liked it, I’m going to shout it from the roof tops (or maybe just a 2nd story window).

If you guessed wine and heavy cream, you’re right. You just can’t lose with those! Now let’s get cooking!
This recipe only takes about 20-25 minutes to make.
Ingredients:
- 1 TB olive oil
- 1 cup chopped shallots (about 6)
- Fresh leaf spinach
- Red bell bepper
- 1/2 cup white wine
- 1 1/2 cups (1 can) tomato sauce
- 1/4 cup parsley
- Salt & Pepper to taste
- 1/3 cup heavy cream
- Box of rigatoni (wheat if you want bonus points)
- Parmesan cheese (to taste)
Directions:

Start Cooking Pasta, then heat oil in saucepan over medium heat, add shallots, mushrooms and red pepper – cook 3-4 minutes

Add wine and spinach, cook 2-3 minutes

Add tomato sauce, parsley and salt/pepper – bring to simmer and cook 4-5 minutes
- Stir in heavy cream – simmer 2 minutes

Serve over pasta and sprinkle with Parmesan cheese
