I don’t typically bake. But I do make one mean green Key Lime Pie.
My secret? It’s based on the recipe that came on a souvenir magnet from Key West. It’s so simple, even I can make it (a requirement for any recipe shared here on the blog).
One of the downsides of moving frequently is losing stuff. I still cannot find our collection of souvenir magnets. {Sigh}. Thankfully I was able to Google an image of the Key West magnet. To make sure I don’t lose the recipe again, I’m archiving it here on the blog to live forever!
Ingredients:
- Graham cracker crust
- 4 eggs
- ½ cup lime juice
- 1 – 14 oz. can sweetened condensed milk
- ½ tsp cream of tartar
- 1/3 cup sugar
Directions:
- Preheat oven to 350 degrees
- Separate the eggs into two bowls – yolks and whites
- Beat egg yolks until light and thick
- Blend in lime juice, then the sweetened condensed milk
- Pour mixture into the prepared pie shell
- To make the meringue topping, beat egg whites with cream of tartar until stiff
- Gradually beat in sugar until glossy peaks form
- Spread egg white mix over surface of pie
- Bake 20 minutes or until golden brown on top
- Chill before serving
There you go – a quick and easy dessert that only requires six ingredients! Enjoy!
