So I pulled out the crock pot and tossed the following in:
- Diced turkey (about 2 cups)
- 4 cans Chicken stock and/or leftover turkey stock (plus 2 Cup hot water)
- 2 Cups frozen corn
- Chopped up celery, carrots and onion (whatever was leftover in fridge)
- 1 Cup rice (or can use egg noodles – put in towards the end)
- Seasoned with salt, pepper and parsley flakes
I have to say, it came out pretty yummy, and the house smelled great all day! Better yet, I can now move our menu beyond turkey! (Although I did freeze some leftover turkey, so I’ll have to deal with this again at some point).

Update – the rice got rather mushy. Next time, I’ll leave that part out! Otherwise, it was great. Even the kids liked it!
